Breakfast (Ratatouille dip on pita) (303 cals total)

0) Weigh out all ingredients first.

Ingredients/equipment

Aubergine- ¼ (33 cals),Cubed

Courgette- ½ (16 cals),Cubed

Red bell pepper- ¼ (9 cals),Sliced

Canned tomatoes- 100g (26 cals)

Dried Thyme- 2 tsp (6 cals)

Pita bread- 1 slice (170 cals),Cut into triangles

Parmesan cheese- 10g (43 cals)

Masher

Large bowl

Frying pan

Saucepan

How to make:

1) Add tomatoes, aubergine, courgette and red bell pepper to large bowl.

2) Combine well, add to frying pan.

3) Steadily simmer for 10 minutes.

4) Add Thyme, leave for 5 minutes.

5) Transfer back to large bowl.

6) Press firmly with masher to form a chunky paste.

7) Sprinkle over Parmesan cheese to garnish.

8) Dip in the bread triangles.

9) Eat using bread.
